Dave Miller is Chief Operating Officer of NYY Steak, which opened at Yankee Stadium in time for the 2009 baseball season. Miller has overall responsibility for the new steak restaurant, which is a joint venture between the New York Yankees, LLC and Seminole Hard Rock Entertainment, the parent company of Hard Rock International.

In his management role for NYY Steak, Dave is in charge of hiring and coordinating the work of the management team, as well as restaurant design and construction, menu development, training, kitchen operations and more.

Miller is also Senior Vice President of Operations for Seminole Hard Rock Entertainment & Seminole Gaming and oversees hospitality and food and beverage initiatives throughout the organization.

Prior to working for Seminole Gaming, Miller was Senior Director of Operations for the Isle of Capri Casino in Kansas City, Missouri, where he developed a highly functioning management team and oversaw major renovation and expansion projects.

Miller has more than 29 years of gaming industry and restaurant experience, having launched his career at Bally's Park Place in Atlantic City, N.J. Some of his management titles have included Director of Food and Beverage Support Services, Director of Food and Beverage, Senior Director of Operations, Vice President of Operations and Interim General Manager. Miller also has experience owning and operating restaurants outside the gaming industry in southwestern Ohio.

Miller received his bachelor's degree in Hotel Administration from Cornell University's School of Hotel Administration.
